Just wanted to share...
I came up with this recipe a couple of years ago just to get more mileage out of Thanksgiving leftovers, but now we look forward to it almost more than the TG dinner itself.
Creamy Turkey Salad
2C finely chopped turkey (white or dark meat)
4oz (half brick) cream cheese
2/3C Miracle Whip (no guarantees if you use Mayo!)
1C whole fresh cranberries
2T sugar
Roughly chop cranberries, combine all ingredients and blend until smooth.
This is good served any way you'd serve chicken salad, but it's especially good on cranberry wheat bread or crackers. This recipe makes enough salad for two adults to snack on all day. (-:

Santa's Turkey Enchilada Casserole
1 to 1½ lbs skinless turkey (white and dark) chopped
½ onion chopped
2 bell peppers (red & green, yellow & green, red & yellow) chopped
1 cup salsa
1 cup sour cream (flavored if you want)
1 can beans (pinto, black, kidney heck use navy)
1 small can corn
1 small can peas
1½ cups shredded cheese
12 corn tortillas
Season to taste
Saute onion and peppers in a large skillet on medium with olive oil and roasted garlic, add drained corn, peas, and beans, continue to stir. 10 min
Arrange tortillas in a single layer on the bottom of a 13x9 inch baking dish and cover with turkey mix, salsa, cream cheese, and shredded cheese.
Repeat layer. Cover with foil.
Bake at 400 40 min or till heated through. Let stand for 5 min.
